  • 2 cans of black-eyed peas, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 red onion, diced

  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine black-eyed peas, red bell pepper, red onion, parsley, and cilantro.

  2. In a small bowl, whisk together olive oil, red wine vinegar, dijon mustard, garlic, salt, and pepper.

  3. Drizzle dressing over salad and toss to coat.

  4. Serve chilled.
