  • 4 boneless, skinless chicken breasts
  • 1/2 cup soy sauce
  • 2 tbsp. honey
  • 2 tbsp. brown sugar
  • 1 tbsp. mirin
  • 1 tbsp. rice vinegar
  • 1 tsp. sesame oil
  • 2 garlic cloves, minced
  • 1/4 tsp. ground ginger
  • 1 tbsp. cornstarch
  • 1 tbsp. water
  • Salt and pepper, to taste
  • 2 tbsp. vegetable oil
  • Green onions, chopped, for garnish
  • Steamed white rice, for serving

Instructions

  1. Cut chicken breasts into bite-sized pieces and season with salt and pepper.

  2. Heat vegetable oil in a large skillet over medium-high heat.

  3. Add chicken to skillet and cook until browned on all sides and cooked through, approximately 5-7 minutes.

  4. In a small saucepan, whisk together soy sauce, honey, brown sugar, mirin, rice vinegar, sesame oil, garlic, and ginger.

  5. In a separate bowl, whisk together cornstarch and water until smooth.

  6. Pour sauce into the same skillet and bring to a simmer.

  7. Add cornstarch mixture to skillet and whisk until sauce thickens, approximately 2-3 minutes.

  8. Serve chicken teriyaki over steamed white rice and garnish with chopped green onions.
