Ingredients

  • 1 cup uncooked quinoa
  • 4 chicken breasts, sliced
  • Salt and pepper
  • 1 broccoli head, chopped
  • 1 red pepper, sliced
  • 1 green onion, sliced
  • 2 tbsp olive oil
  • ½ cup teriyaki sauce
  • 1 cup edamame beans, shelled
  • 2 tbsp sesame seeds

Instructions

  1. Cook quinoa according to package instructions.

  2. Season chicken with salt and pepper. In a large skillet over medium heat, cook chicken until browned and cooked through.

  3. In another skillet over medium heat, sauté broccoli, red pepper, and green onion in olive oil for 5-7 minutes.

  4. Add cooked chicken and teriyaki sauce to the skillet with vegetables. Stir for 3-4 minutes until everything is heated through.

  5. Divide quinoa into bowls and top with chicken and veggie mixture. Sprinkle with edamame beans and sesame seeds.
