Ingredients

  • 1 lb ground beef
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cans (14 oz each) diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (4 oz) diced green chilies
  • 1 cup beef broth

Instructions

  1. In a large pot, cook ground beef over medium heat until browned. Drain excess fat.

  2. Add onions, green peppers, and garlic to the pot and cook until softened.

  3. Stir in cumin, chili powder, paprika, salt, and black pepper.

  4. Add tomatoes, kidney beans, black beans, green chilies, and beef broth to the pot.

  5. Bring to a boil then reduce heat and simmer for 1 hour.

  6. Serve hot with toppings of your choice.
