Ingredients

  • 1 pound chicken breast, cut into strips
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup toasted corn
  • 1/2 cup black beans, drained and rinsed
  • Juice of 1 lime

Instructions

  1. Preheat grill to medium-high heat.

  2. In a bowl, toss chicken strips with olive oil, paprika, salt, and pepper.

  3. Grill chicken for 6-8 minutes per side or until cooked through.

  4. In a large salad bowl, combine mixed greens, cherry tomatoes, red onion, jalapeño, cilantro, toasted corn, and black beans.

  5. Toss salad with lime juice.

  6. Top with cooked chicken strips and serve.
