How To Make Potbelly Broccoli Cheddar Soup Recipe

Creamy soup filled with tender broccoli and melted cheddar cheese.

Serves:

Ingredients

  • 4 cups of chicken or vegetable broth
  • 2 cups of chopped broccoli florets
  • 1 cup of heavy cream
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of all-purpose flour
  • 2 tbsp of unsalted butter
  • 1 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil and butter over medium heat until melted.

  2. Add the flour and whisk together until smooth.

  3. Slowly pour in the chicken or vegetable broth while whisking constantly to prevent lumps from forming.

  4. Add the chopped broccoli, salt and pepper and stir together.

  5. Simmer over medium-low heat for 20-25 minutes or until the broccoli is tender.

  6. Remove from heat and stir in the heavy cream and shredded cheddar cheese until melted and creamy.

  7. Serve hot and enjoy!
