How To Make Pollo Loco Soup Recipe

A flavorful and hearty Mexican-inspired chicken soup loaded with vegetables, seasonings, and tender shredded chicken.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño pepper, seeded and minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 4 cups chicken broth
  • 1 can diced tomatoes, drained
  • 1 can black beans, rinsed and drained
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, chopped fresh cilantro, lime wedges

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes per side. Remove the chicken and shred it with two forks.

  2. Add the onion, garlic, bell peppers, and jalapeño to the pot and sauté until tender, about 5-7 minutes.

  3. Add the chili powder, cumin, and paprika, and stir to coat the vegetables.

  4. Add the chicken broth, diced tomatoes, black beans, and shredded chicken to the pot. Bring the soup to a simmer and let cook for 20-30 minutes until the vegetables are soft and the flavors have melded together.

  5. Season with salt and pepper to taste.

  6. Serve hot with optional toppings if desired.
