Ingredients

  • 1 lb. chicken tenders
  • 1 cup flour
  • 2 eggs, beaten
  • 2 cups panko bread crumbs
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper
  • 4 cups mixed greens
  • 1/2 red onion, sliced
  • 1/2 cup grape tomatoes
  • 1/2 cup chopped pecans
  • 1/4 cup honey mustard dressing

Instructions

  1. Preheat oven to 375°F.

  2. Dredge chicken tenders in flour, dip in beaten eggs, then coat in panko bread crumbs mixed with Parmesan cheese, salt, and pepper.

  3. Place chicken tenders on a baking sheet and bake for 15 minutes or until golden brown.

  4. In a large bowl, mix together mixed greens, red onion, grape tomatoes, and pecans.

  5. Top salad with chicken tenders and drizzle with honey mustard dressing.
