How To Make O’Charley’s Loaded Potato Soup Recipe

Creamy, hearty and flavorful soup loaded with potatoes, bacon and cheese – a perfect comfort food.

Serves:

Ingredients

  • 5 medium potatoes, peeled and cubed
  • 4 slices of bacon, diced
  • 1/2 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • 1/2 cup of shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook bacon until crispy, remove and set aside.

  2. In the same pot, sauté onions and garlic until soft.

  3. Add potatoes and chicken broth.

  4. Boil and then reduce heat to simmer for 20 minutes or until potatoes are tender.

  5. Mash some of the potatoes to thicken soup.

  6. Add the heavy cream and bring it back to simmer.

  7. Stir in bacon, cheese, salt and pepper.

  8. Serve hot.
