Ingredients

  • 2 large red peppers
  • 1 small red onion
  • 1 large cucumber
  • 4 medium-sized vine tomatoes
  • 1/2 small jalapeño pepper, seeded
  • 1 small garlic clove, minced
  • 2 tablespoons of sherry vinegar
  • 2 tablespoons of extra-virgin olive oil
  • 2 cups of cold water
  • Salt, to taste

Instructions

  1. Roughly chop the peppers, onion, cucumber, and tomato and put them in a large bowl with the jalapeño pepper and garlic.

  2. Add the sherry vinegar, olive oil, and water to the bowl.

  3. Use a hand blender or food processor to blend the ingredients until it is a smooth consistency.

  4. Add salt to taste.

  5. Chill the soup for at least an hour or until completely cool.

  6. Serve with a drizzle of olive oil.
