Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/4 cup powdered sugar
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest

Instructions

  1. Preheat oven to 350°F and line a square baking pan with parchment paper.

  2. In a mixing bowl, combine flour, butter, and powdered sugar. Mix until mixture appears crumbly, then press into the prepared baking pan.

  3. Bake crust for 20 minutes, or until lightly golden brown.

  4. In the same mixing bowl, whisk together eggs, granulated sugar, baking powder, lemon juice, and lemon zest.

  5. Pour mixture over the baked crust, then bake for an additional 15 minutes.

  6. Cool bars, then slice into squares.
