How To Make Lainy’s Beef Caldereta Recipe
Lainy’s Beef Caldereta is a flavorful and savory Filipino stew made with tender beef, potatoes, carrots, bell peppers, and olives simmered in a tomato-based sauce.

Ingredients
- 500g beef chuck, cut into cubes
- 2 tbsp vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 potatoes, peeled and cubed
- 1 carrot, peeled and cubed
- 1 cup tomato sauce
- 2 cups beef broth
- 1 tbsp tomato paste
- 1/4 cup green olives
- 1/4 cup raisins
- 1 tsp sugar
- Salt and pepper to taste
- 1 tbsp liver spread (optional)
Instructions

In a pot or Dutch oven, heat vegetable oil over medium heat. Add onions and garlic and cook until onions are soft and translucent.

Add beef and cook until browned on all sides, about 5-10 minutes.

Add tomato sauce, beef broth, and tomato paste. Give it a good stir and bring to a boil.

Lower the heat, cover the pot, and let it simmer for 1 and a half to 2 hours or until the beef is tender.

Add potatoes, carrots, bell peppers, olives, raisins, sugar, salt, and pepper. Mix well and continue to simmer until vegetables are cooked, about 10-15 minutes.

If desired, add liver spread and mix well until the sauce thickens.

Serve hot with steamed rice.
