How To Make Blue Ribbon Beef Stew Recipe

A hearty and flavorful beef stew that will warm you up on a cold day.

Ingredients

  • 1 1/2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 1 bay leaf
  • 1 tsp dried thyme
  • 4 carrots, peeled and chopped
  • 3 potatoes, peeled and chopped
  • 1 cup frozen peas
  • salt and pepper to taste

Instructions

  1. In a large Dutch oven, heat the vegetable oil over medium heat.

  2. Add the beef cubes and cook until browned on all sides, about 5 minutes.

  3. Add the onion and garlic and cook until softened, about 5 minutes.

  4. Pour in the beef broth and red wine, and add the bay leaf and dried thyme.

  5. Bring the mixture to a boil, then reduce the heat to low.

  6. Cover and simmer for 1 1/2 hours, stirring occasionally.

  7. Add the chopped carrots and potatoes and continue to simmer for another 30-40 minutes, or until the vegetables are tender.

  8. Add the frozen peas and cook for another 5 minutes to heat through.

  9. Season with salt and pepper to taste.
