Ingredients

  • 4 boneless chicken breasts
  • 4 cups cooked rice
  • 2 cups sliced mushrooms
  • 1 cup sliced onions
  • 1 cup sliced zucchini
  • 1 cup sliced carrots
  • 1/4 cup soy sauce
  • 3 tbsp vegetable oil
  • 2 cloves garlic, minced
  • salt and pepper to taste

Instructions

  1. Heat up a large frying pan or wok over high heat.

  2. Add 1 tbsp of oil and sauté the sliced mushrooms until tender. Set aside.

  3. In the same pan, add another 1 tbsp of oil, and sear the chicken breasts until golden brown, season with salt and pepper to taste. Remove from the pan and set aside.

  4. Add the remaining 1 tbsp of oil, sauté the sliced onions, zucchini, and carrots until tender.

  5. Add back the cooked mushrooms and garlic, stir fry for 1 minute.

  6. Add in the cooked rice and soy sauce, mix everything well.

  7. Slice the seared chicken breasts and add them to the pan, mix with the veggies and rice.

  8. Serve hot and enjoy your delicious Benihana hibachi chicken!
