How To Make Cheesy Green Veg Gratin

Ingredients
- 4 cups of mixed green vegetables (broccoli, spinach, peas, asparagus)
- 1 cup of shredded cheddar cheese
- 1/4 cup of grated Parmesan cheese
- 3 cloves of garlic, minced
- 1 onion, diced
- 2 tablespoons of butter
- 2 tablespoons of all-purpose flour
- 1 cup of milk
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of dried thyme
Instructions

Preheat the oven to 375°F (190°C). Grease a baking dish.

In a large pot of salted boiling water, blanch the green vegetables for 2 minutes. Drain and set aside.

In a separate saucepan, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

Stir in the flour and cook for 1 minute. Gradually whisk in the milk until smooth.

Cook the sauce until thickened, stirring frequently. Remove from heat and stir in the shredded cheddar cheese until melted.

Add the salt, pepper, and dried thyme to the sauce.

In the prepared baking dish, arrange the blanched green vegetables. Pour the cheese sauce over the vegetables.

Sprinkle the grated Parmesan cheese over the top.

Bake in the preheated oven for 20-25 minutes, until the top is golden and bubbly.
