Ingredients

  • 8 oz rotini pasta
  • 2 cups cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, diced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 1/2 cup mayonnaise
  • 1/4 cup basil pesto
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse with cold water.

  2. In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, black olives, red onion, Parmesan cheese, and pine nuts.

  3. In a separate small bowl, whisk together the mayonnaise, basil pesto, lemon juice, salt, and pepper.

  4. Pour the creamy pesto dressing over the pasta salad and toss until well coated.

  5. Serve chilled and enjoy!
