Ingredients

  • 2 lbs pork shoulder, boneless
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup diced pineapple
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeno, seeded and diced
  • 2 tbsp lime juice
  • 8 small flour tortillas
  • Optional toppings: avocado, sour cream, shredded cheese

Instructions

  1. In a slow cooker, combine the pork shoulder, pineapple juice, soy sauce, garlic, cumin, paprika, chili powder, salt, and black pepper. Cook on low for 8 hours or on high for 4 hours, until the pork is tender and easily pulls apart.

  2. While the pork is cooking, prepare the pineapple salsa by combining the diced pineapple, red onion, cilantro, jalapeno, and lime juice in a bowl. Stir well and refrigerate until ready to serve.

  3. Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and stir it in the cooking juices to coat.

  4. Heat the flour tortillas in a dry skillet over medium heat until warmed through and slightly toasted.

  5. To assemble the tacos, place a generous amount of pulled pork onto each tortilla. Top with pineapple salsa and any desired optional toppings. Serve immediately.
