How To Make Chicken with Lemon & Courgette Couscous

Ingredients
- 4 chicken breasts
- 2 lemons
- 2 courgettes
- 2 cups of couscous
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Season the chicken breasts with salt, pepper, and dried oregano.

Heat the olive oil in a large skillet and cook the chicken breasts for about 5 minutes on each side until browned. Remove from the skillet and place on a baking sheet.

Slice one lemon and arrange the slices on top of the chicken breasts. Squeeze the juice of the other lemon over the chicken.

Bake the chicken in the preheated oven for about 20 minutes or until cooked through.

While the chicken is baking, prepare the couscous according to the package instructions.

In the same skillet, sauté the onion and garlic until softened.

Add the courgettes and cook for another 5 minutes until tender.

Fluff the couscous with a fork and add it to the skillet with the courgettes. Stir well to combine.

Season the couscous with salt and pepper to taste.

Serve the chicken with a generous portion of lemon and courgette couscous.
