Citrus-Spiced Sweet Potato Mash Recipe

Ingredients

  • 4 cups water, for boiling
  • 6 sweet potatoes, peeled and cubed
  • 1/2 cup orange juice
  • 1/4 cup heavy cream
  • 1 tsp orange zest
  • 1/2 tsp ground nutmeg
  • 1/8 tsp salt

Instructions

  1. In a large pot, bring water to a boil and add sweet potatoes.

  2. Cook for 15-20 minutes, or until fork-tender.

  3. Drain sweet potatoes and return to the same empty pot. Using a hand-held mixer, add the rest of the ingredients and mix until fluffy.

  4. Reheat if necessary and serve immediately.
