Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 chipotle pepper in adobo sauce, minced
  • 2 tablespoons unsalted butter
  • 1/4 cup milk (or more for desired consistency)
  • Salt and pepper to taste
  • Chopped fresh cilantro (optional, for garnish)

Instructions

  1. In a large pot, bring water to a boil and add the cubed sweet potatoes. Cook for about 15-20 minutes or until tender.

  2. Drain the sweet potatoes and return them to the pot.

  3. Add the minced chipotle pepper, butter, and milk to the pot.

  4. Using a potato masher or electric mixer, mash the sweet potatoes until smooth and creamy. Add more milk if needed for desired consistency.

  5. Season with salt and pepper to taste.

  6. Serve the sweet potato & chipotle mash hot, garnished with chopped fresh cilantro if desired.
