Ingredients

  • 4 chicken breasts
  • 2 tablespoons of grated ginger
  • Juice and zest of 1 lime
  • 2 cloves of garlic, minced
  • 2 tablespoons of soy sauce
  • 2 tablespoons of honey
  • Salt and pepper to taste
  • 4 medium sweet potatoes, peeled and cubed
  • 4 tablespoons of butter
  • 1/4 cup of milk

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix together the grated ginger, lime juice and zest, minced garlic, soy sauce, honey, salt, and pepper.

  3. Place the chicken breasts in a baking dish and pour the ginger-lime marinade over them. Make sure the chicken is evenly coated. Let it marinate for at least 10 minutes.

  4. Bake the chicken in the preheated oven for 20-25 minutes, or until cooked through. Baste with the marinade halfway through cooking.

  5. While the chicken is cooking, boil the sweet potatoes in a pot of salted water until tender. Drain well.

  6. In a separate bowl, mash the sweet potatoes with butter, milk, salt, and pepper until creamy and smooth.

  7. Serve the ginger-lime chicken with a generous spoonful of sweet potato mash.
