How To Make Ginger & Lime Chicken with Sweet Potato Mash

Ingredients
- 4 chicken breasts
- 2 tablespoons of grated ginger
- Juice and zest of 1 lime
- 2 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 2 tablespoons of honey
- Salt and pepper to taste
- 4 medium sweet potatoes, peeled and cubed
- 4 tablespoons of butter
- 1/4 cup of milk
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, mix together the grated ginger, lime juice and zest, minced garlic, soy sauce, honey, salt, and pepper.

Place the chicken breasts in a baking dish and pour the ginger-lime marinade over them. Make sure the chicken is evenly coated. Let it marinate for at least 10 minutes.

Bake the chicken in the preheated oven for 20-25 minutes, or until cooked through. Baste with the marinade halfway through cooking.

While the chicken is cooking, boil the sweet potatoes in a pot of salted water until tender. Drain well.

In a separate bowl, mash the sweet potatoes with butter, milk, salt, and pepper until creamy and smooth.

Serve the ginger-lime chicken with a generous spoonful of sweet potato mash.
