Ingredients

  • 4 medium sweet potatoes, peeled and cubed
  • 1 can (400ml) coconut milk
  • 2 red chillies, deseeded and finely chopped
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, bring water to a boil. Add the sweet potatoes and cook until fork-tender, about 15 minutes. Drain and set aside.

  2. In a separate pan, heat the olive oil over medium heat. Add the minced garlic and chopped chillies. Sauté for 2-3 minutes until fragrant.

  3. Add the cooked sweet potatoes and coconut milk to the pan. Mash until smooth using a potato masher or fork. Season with salt and pepper to taste.

  4. Continue to cook the mash for another 5-7 minutes, stirring occasionally, until heated through.

  5. Serve the sweet potato mash hot, garnished with fresh cilantro.
