How To Make Sweet Potato, Coconut & Chilli Mash

Ingredients
- 4 medium sweet potatoes, peeled and cubed
- 1 can (400ml) coconut milk
- 2 red chillies, deseeded and finely chopped
- 2 cloves of garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, bring water to a boil. Add the sweet potatoes and cook until fork-tender, about 15 minutes. Drain and set aside.

In a separate pan, heat the olive oil over medium heat. Add the minced garlic and chopped chillies. Sauté for 2-3 minutes until fragrant.

Add the cooked sweet potatoes and coconut milk to the pan. Mash until smooth using a potato masher or fork. Season with salt and pepper to taste.

Continue to cook the mash for another 5-7 minutes, stirring occasionally, until heated through.

Serve the sweet potato mash hot, garnished with fresh cilantro.
