How To Make Chicken with Chorizo, Peppers & Saffron Mash

Ingredients
- 4 chicken breasts
- 150g chorizo, sliced
- 2 red bell peppers, sliced
- 1 yellow bell pepper, sliced
- 800g potatoes, peeled and cubed
- 1/2 teaspoon saffron threads
- 4 tablespoons olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

Place the cubed potatoes and saffron threads in a pot of salted water. Bring to a boil and cook until tender. Drain and mash with a potato masher until smooth. Set aside.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-6 minutes per side, or until cooked through. Remove from the skillet and set aside.

In the same skillet, add the sliced chorizo and bell peppers. Cook for 5 minutes, or until the peppers are tender and the chorizo is slightly crispy.

In a separate oven-safe dish, spread the mashed potatoes evenly. Place the cooked chicken breasts on top of the mashed potatoes.

Pour the chorizo and bell pepper mixture over the chicken and potatoes. Drizzle with the remaining 2 tablespoons of olive oil.

Bake in the preheated oven for 10-15 minutes, or until heated through.

Serve the chicken with chorizo, peppers, and saffron mash hot.
