Ingredients

  • 8 eggs
  • 1/2 cup cheddar cheese, grated
  • 1 tbsp curry powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp milk
  • 2 tbsp butter
  • 2 green onions, thinly sliced

Instructions

  1. In a bowl, whisk together the eggs, cheddar cheese, curry powder, salt, black pepper, and milk.

  2. Heat butter in a non-stick skillet over medium heat.

  3. Pour the egg mixture into the skillet and cook, stirring constantly, for 2-3 minutes or until the eggs are cooked to your desired consistency.

  4. Remove from heat and garnish with green onions.

  5. Serve hot with toast or rice.
