  • 2 cups spinach, chopped
  • 1 cup cheddar cheese, shredded
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup milk
  • ¼ cup vegetable oil
  • 1 egg

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

  2. In a large bowl, combine the flour, baking powder, salt, and black pepper.

  3. In a separate bowl, whisk together the milk, vegetable oil, and egg.

  4. Add the wet ingredients to the dry ingredients and mix until just combined.

  5. Gently stir in the chopped spinach and shredded cheddar cheese.

  6. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.

  7. Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

  8. Remove from the oven and allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
