
How To Make Christmas Sausage & Veg Tortilla

Ingredients
- 8 ounces of sausage, crumbled
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 6 large eggs
- 1/4 cup of milk
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 teaspoon of dried oregano
- 4 large flour tortillas
- 1 cup of shredded cheddar cheese
Instructions

In a large skillet, cook the sausage over medium heat until browned. Remove sausage from skillet and set aside.

In the same skillet, sauté the bell peppers and onion until they are tender, about 5 minutes. Remove from skillet and set aside.

In a bowl, beat the eggs with the milk, salt, black pepper, and oregano.

Pour the egg mixture into the skillet and cook over medium heat, stirring occasionally, until the eggs are scrambled and cooked through.

Stir in the cooked sausage, bell peppers, and onion into the scrambled eggs until well combined.

Warm the flour tortillas in the oven or microwave.

Divide the sausage and vegetable mixture evenly among the tortillas, then sprinkle with shredded cheddar cheese.

Roll up the tortillas tightly, then slice in half diagonally to serve.
