Ingredients

  • 1 cup of green lentils
  • 1 apple, thinly sliced
  • 1/2 cup of walnuts, chopped
  • 1/4 cup of blue cheese, crumbled
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the lentils according to package instructions. Drain and set aside to cool.

  2. In a large bowl, combine the cooked lentils, apple slices, walnuts, and blue cheese.

  3. In a separate small bowl, whisk the olive oil, lemon juice, salt, and pepper together.

  4. Pour the dressing over the salad and toss gently to combine.

  5. Serve the salad chilled or at room temperature.
