Ingredients

  • 4 salmon fillets
  • 1/4 cup jerk seasoning
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp vegetable oil
  • 2 cups shredded cabbage
  • 1 ripe mango, thinly sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped red onion
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice
  • Salt and pepper, to taste

Instructions

  1. Preheat grill to medium-high heat.

  2. In a small bowl, mix together jerk seasoning, honey, soy sauce, lime juice, and vegetable oil.

  3. Brush jerk sauce mixture onto salmon fillets.

  4. Grill salmon for 6-7 minutes per side, or until cooked through and slightly charred.

  5. In a large bowl, combine shredded cabbage, mango slices, cilantro, red onion, mayonnaise, lime juice, salt, and pepper. Toss well to coat.

  6. Serve grilled salmon over a bed of mango slaw.
