How To Make Sweet & Spicy Apricot Chicken

- 4 boneless, skinless chicken breasts
- 1/2 cup apricot preserves
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon Sriracha sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil
- 2 green onions, chopped (for garnish)
Instructions

Preheat the oven to 375°F (190°C).

In a small bowl, whisk together the apricot preserves, soy sauce, Dijon mustard, Sriracha sauce, garlic powder, salt, and black pepper.

Heat the vegetable oil in a large oven-safe skillet over medium-high heat.

Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 4-5 minutes on each side, or until browned.

Pour the apricot glaze over the chicken breasts, making sure they are evenly coated.

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the glaze is sticky and caramelized.

Remove from the oven and let the chicken rest for 5 minutes before serving.
