Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup honey
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 3/4 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.

  2. In a large bowl, combine the mashed bananas, honey, coconut oil, eggs, and vanilla extract. Mix well.

  3. In a separate bowl, whisk together the whole wheat flour, baking soda, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  5. Fold in the chopped nuts.

  6. Pour the batter into the greased loaf pan.

  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let the bread cool in the pan for 10 minutes.

  9. Transfer the bread to a wire rack to cool completely before slicing.
