Ingredients
- 1 cup whole wheat flour
- 1 tbsp baking powder
- 1 tbsp honey
- 1 cup milk of choice
- 1 tsp vanilla extract
- 1 ripe banana
- 2 tbsp unsweetened applesauce
- Fresh fruit, such as blueberries and strawberries, for decorating

In a large bowl, whisk together the whole wheat flour and baking powder.
-
In another bowl, mash the ripe banana until smooth. Add in the honey, milk, vanilla extract, and unsweetened applesauce. Mix well.
-
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
-
Heat a non-stick skillet or griddle over medium heat. Use a bunny-shaped mold or cookie cutter to shape the pancakes.

Pour a small amount of batter into the mold and cook until bubbles form on the surface. Carefully remove the mold and flip the pancake. Cook until golden brown.
-
Repeat with the remaining batter.
-
Decorate the bunny pancakes with fresh fruit to create eyes, a nose, and whiskers.
