These adorable bunny-shaped pancakes are a healthy twist on a classic breakfast favorite.

Ingredients

  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1 tbsp honey
  • 1 cup milk of choice
  • 1 tsp vanilla extract
  • 1 ripe banana
  • 2 tbsp unsweetened applesauce
  • Fresh fruit, such as blueberries and strawberries, for decorating

Instructions

  1. In a large bowl, whisk together the whole wheat flour and baking powder.

  2. In another bowl, mash the ripe banana until smooth. Add in the honey, milk, vanilla extract, and unsweetened applesauce. Mix well.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  4. Heat a non-stick skillet or griddle over medium heat. Use a bunny-shaped mold or cookie cutter to shape the pancakes.

  5. Pour a small amount of batter into the mold and cook until bubbles form on the surface. Carefully remove the mold and flip the pancake. Cook until golden brown.

  6. Repeat with the remaining batter.

  7. Decorate the bunny pancakes with fresh fruit to create eyes, a nose, and whiskers.
