Ingredients
- 2 cups cassava flour
- 1/2 tsp salt
- 1/4 cup olive oil
- 1 cup warm water
Instructions

In a large bowl, mix cassava flour and salt together.

Add olive oil to the flour mixture and mix well.

Gradually pour in warm water, stirring as you go, until a soft dough forms.

Knead the dough for a few minutes until smooth and elastic.

Divide the dough into 8 equal portions and roll each portion into a ball.

Place a ball of dough between two sheets of parchment paper and roll it out into a thin 6-inch circle.

Heat a non-stick skillet over medium heat and cook each tortilla for about 1-2 minutes on each side or until lightly golden brown.

Repeat the process with the remaining dough balls.
