How To Make Hole Mole’s Veggie Fajitas

A vegetarian twist on classic fajitas with sautéed bell peppers, onions, and mushrooms.

Serves:

Ingredients

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 8 flour tortillas
  • Optional toppings: avocado, cheese, sour cream, salsa

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add sliced bell peppers, onions, and mushrooms, along with minced garlic.

  3. Season with chili powder, cumin, paprika, salt, and pepper.

  4. Cook until vegetables are tender and slightly charred, about 10-12 minutes.

  5. Warm flour tortillas in a separate pan or in the oven.

  6. Fill tortillas with veggie mixture and optional toppings.

  7. Serve and enjoy!
