How To Make Apple Streusel Bran Muffins

Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, combine the bran flakes and buttermilk. Let it sit for 5 minutes to soften.
Add the vegetable oil, honey, and egg to the bran mixture. Stir until well combined.
In a separate bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
Gradually add the dry ingredients to the bran mixture, stirring just until combined. Do not overmix.
Fold in the diced apple.
In a small bowl, combine the streusel topping ingredients. Use your fingers to rub the butter into the flour and sugar until crumbly.
Spoon the muffin batter into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the streusel topping over each muffin.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
