Ingredients
- 2 cups masa harina (corn flour)
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup pineapple juice
- 1 cup crushed pineapple, drained
- 1/4 cup raisins
- 1/4 cup shredded coconut
- 4 pineapple slices (for garnish)
Instructions

In a large bowl, combine the masa harina, softened butter, sugar, baking powder, and salt. Mix well.

Gradually add the pineapple juice to the mixture, stirring until a soft dough forms.

Stir in the crushed pineapple, raisins, and shredded coconut.

Take a corn husk and spread about 2 tablespoons of the dough mixture onto the husk, leaving a border around the edges.

Fold the sides of the corn husk towards the center, enclosing the filling, and fold the bottom up.

Place the tamales in a steamer basket and steam for about 1 hour, or until the dough is cooked through and firm.

Remove from the steamer and let cool slightly before serving.

Garnish each tamale with a pineapple slice before serving.
