Ingredients

  • 2 cups masa harina (corn flour)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup pineapple juice
  • 1 cup crushed pineapple, drained
  • 1/4 cup raisins
  • 1/4 cup shredded coconut
  • 4 pineapple slices (for garnish)

Instructions

  1. In a large bowl, combine the masa harina, softened butter, sugar, baking powder, and salt. Mix well.

  2. Gradually add the pineapple juice to the mixture, stirring until a soft dough forms.

  3. Stir in the crushed pineapple, raisins, and shredded coconut.

  4. Take a corn husk and spread about 2 tablespoons of the dough mixture onto the husk, leaving a border around the edges.

  5. Fold the sides of the corn husk towards the center, enclosing the filling, and fold the bottom up.

  6. Place the tamales in a steamer basket and steam for about 1 hour, or until the dough is cooked through and firm.

  7. Remove from the steamer and let cool slightly before serving.

  8. Garnish each tamale with a pineapple slice before serving.
