- 1 can of kidney beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 stalks celery, chopped
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions

In a large pot, heat oil over medium heat.

Add onion and garlic and sauté until fragrant.

Add carrots and celery and cook for 5 minutes.

Add cumin and chili powder and cook for another minute.

Add kidney beans and vegetable broth.

Bring soup to a boil, reduce heat and let simmer for 30-35 minutes.
