Ingredients

  • 1 can of cannellini beans, drained and rinsed
  • 2 medium-sized tomatoes, chopped
  • 1 clove of garlic, minced
  • 2 tbsp of extra-virgin olive oil
  • 1 tbsp of lemon juice
  • 1/4 tsp of salt
  • 1/8 tsp of black pepper
  • 4 slices of rustic bread

Instructions

  1. In a medium bowl, mix the cannellini beans, chopped tomatoes, minced garlic, olive oil, lemon juice, salt, and black pepper.

  2. Preheat the oven to 400°F.

  3. Slice the bread and place them on a baking sheet. Bake in the oven for 5-7 minutes or until the bread is toasted.

  4. Remove the bread from the oven and top each slice with the cannellini bean and tomato mixture.

  5. Serve the bruschetta immediately.
