How To Make Fava Bean Soup

A hearty and delicious soup made with fresh fava beans, vegetables, and aromatic herbs.

Ingredients

  • 2 cups shelled fava beans
  • 1 chopped onion
  • 2 chopped garlic cloves
  • 1 chopped celery stick
  • 2 chopped carrots
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot and sauté onion, garlic, celery, and carrot until soft.

  2. Add in fava beans, vegetable broth, bay leaf, and seasoning.

  3. Bring to a boil then reduce heat and simmer for 30-40 minutes until beans are tender.

  4. Remove bay leaf and blend soup until smooth. Adjust seasoning to taste.

  5. Serve hot with crusty bread on the side.
