Ingredients

  • 8 eggs
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Paprika, for garnish
  • Fresh parsley, for garnish

Instructions

  1. Place eggs in a saucepan and cover with water. Bring to a boil, then remove from heat and let sit for 12 minutes.

  2. Drain eggs and run under cold water to cool. Peel and slice in half lengthwise.

  3. Gently remove yolks and place in a bowl. Mash yolks with a fork.

  4. Add mayonnaise, mustard, salt, and pepper to the bowl with the mashed yolks. Mix until well combined and creamy.

  5. Spoon or pipe the yolk mixture back into the egg whites.

  6. Garnish with a sprinkle of paprika and a small sprig of fresh parsley.

  7. Serve chilled.
