Ingredients

  • 8 hard-boiled eggs
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1/2 tsp Cajun seasoning
  • 1/4 tsp paprika
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Instructions

  1. Cut the hard-boiled eggs in half lengthwise and remove the yolks. Place the yolks in a bowl and mash with a fork.

  2. Add the mayonnaise, Dijon mustard, Cajun seasoning, paprika, salt, and pepper to the mashed yolks. Stir until well combined.

  3. Spoon the mixture back into the egg white halves.

  4. Garnish with chopped green onions and sprinkle with additional Cajun seasoning, if desired.

  5. Serve immediately or refrigerate until ready to serve.
