Pickled Beets Recipe is easy to make and can last up to six weeks. Focus heavily on the vinegar to offset the sweetness of the beets. You can have it as a side dish or as a snack.

Ingredients

  • 1 cup vinegar, apple cider is best
  • 1 cup sugar, Splenda can be substituted
  • 4 cans beets

Instructions

  1. Drain most of the liquid from the beets, reserving ½ can of the liquid.

  2. Place beets in a large plastic bowl with lid.

  3. Add liquid, vinegar, and sugar.

  4. Cover and shake well to mix.

  5. Refrigerate overnight or longer.
