  • cups cider vinegar
  • cups water
  • 1 cup sugar
  • 1 tbsp kosher salt
  • 1 tbsp red pepper, crushed
  • 2 tsp whole black peppercorns
  • 6 whole cloves
  • 1 cinnamon stick, (2-inch) broken into small pieces
  • 4 large peaches, slightly firm peeled


  1. Combine the first 8 ingredients in a large saucepan; bring to a boil. Cook for 2 minutes, stirring until sugar dissolves. Remove from heat; let stand for 10 minutes.

  2. Cut each peach into 12 wedges. Add peaches to vinegar mixture; let stand 20 minutes. Remove peaches with a slotted spoon.

  3. Serve and enjoy.
