Fridge Pickles Recipe

Pickled cucumbers with red bell pepper and onion make a tasty snack. The salt sucks the water out of the cucumbers, which keeps these fridge pickles nice and crunchy! Enjoy!


How To Make Fridge Pickles

Store this tasty pickles in the fridge and you have yourself a light and flavorful snack when you're craving for some.

Serves:

Ingredients

  • 8 cups cucumbers, sliced , unpeeled
  • 2 cup onions, sliced
  • 1 cup red bell pepper strips
  • 1 tbsp salt
  • 1 ½ cups white vinegar
  • 2 tsp celery seed
  • 2 tsp mustard seed
  • 2 cups granulated sugar,

Instructions

  1. In a large bowl, combine cucumber, onions and red pepper.
  2. Sprinkle with salt and mix well.
  3. Let stand for one hour.
  4. Drain ( do not add water) Salt will make it's own liquid to drain off.
  5. Combine sugar, vinegar and spices.

  6. Stir until sugar is dissolved.
  7. Place in a non-metal container.
  8. Pour vinegar mixture of cucumbers, cover and chill at least 24 hours to blend flavors.
  9. Will keep about 6 weeks in fridge!
