How To Make Watermelon Vinaigrette

This watermelon-based dressing is best during the summer season because of its light and delish flavor.

Ingredients

  • 2 cups watermelon, fresh, chopped and drained
  • ¼ cup red onion, diced
  • 2 tbsp honey
  • ¼ cup balsamic vinegar
  • ¾ cup light olive oil
  • 2 tbsp basil, fresh and chopped
  • 1 tbsp parsley, fresh and chopped
  • salt and pepper, to taste

Instructions

  1. Combine watermelon, honey, red onion, vinegar, olive oil, basil, and parsley in a blender.

  2. Pulse on and off for about 30 seconds until combined.

  3. Add salt and pepper to taste.

  4. Serve over mixed salad greens or fresh spinach and strawberries.
