  • 4 large tomatoes, diced
  • 2 bell peppers, diced
  • 1 red onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Juice of 1 lime
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.

  2. Add the diced tomatoes, bell peppers, red onion, and minced garlic to the skillet. Cook for about 5 minutes, until the vegetables are softened.

  3. Stir in the smoked paprika, cumin, lime juice, salt, and pepper. Cook for another 5 minutes to allow the flavors to meld.

  4. Remove from heat and let the salsa cool for a few minutes.

  5. Transfer the salsa to a serving bowl and garnish with fresh cilantro.

  6. Serve with tortilla chips or as a topping for tacos, quesadillas, or grilled meats.
