Ingredients

  • 4 Cumberland sausages
  • 4 hot dog buns
  • 4 slices of cheddar cheese
  • 1 cup cherry tomatoes
  • 1 red onion, sliced
  • 1 jalapeno pepper, sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your grill or grill pan to medium-high heat.

  2. In a small bowl, toss the cherry tomatoes, red onion, jalapeno pepper, minced garlic, olive oil, salt, and pepper together.

  3. Place the seasoned tomatoes and veggies on a grill basket or skewer and grill for about 10 minutes, or until they are slightly charred and softened. Remove from heat and set aside.

  4. Grill the Cumberland sausages for about 12-15 minutes, turning occasionally, until nicely browned and cooked through.

  5. Toast the hot dog buns on the grill for about 2 minutes.

  6. Place a grilled Cumberland sausage in each bun, then top with a slice of cheddar cheese and a generous amount of the charred tomato salsa.

  7. Garnish with fresh cilantro and serve hot.
