How To Make Spiced Pork with Stir-Fried Greens

Ingredients
- 1 lb pork tenderloin, thinly sliced
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups mixed greens (such as spinach, kale, or bok choy)
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
Instructions

In a large skillet, heat olive oil over medium-high heat. Add the thinly sliced pork and cook until browned, about 3-4 minutes per side. Remove the pork from the skillet and set aside.

In the same skillet, add garlic and ginger and sauté for 1 minute until fragrant. Add the ground cumin, coriander, chili powder, salt, and black pepper. Stir well to coat the spices on the garlic and ginger mixture.

Add the mixed greens to the skillet and stir-fry for 2-3 minutes until wilted.

Return the pork to the skillet with the greens and add soy sauce, sesame oil, and rice vinegar. Stir well to combine and cook for an additional 2-3 minutes until the flavors are well blended and the pork is cooked through.
