  • 4 sea bass fillets
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Romesco Sauce:
  • 2 roasted red bell peppers
  • 1/2 cup almonds
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the sea bass fillets with salt and pepper on both sides.

  3. Heat olive oil in a large oven-safe skillet over medium-high heat.

  4. Place the sea bass fillets in the skillet, skin side down, and cook for 2-3 minutes until the skin is crispy.

  5. Carefully flip the fillets and transfer the skillet to the preheated oven.

  6. Bake for 10-12 minutes until the fish is cooked through and flakes easily with a fork.

  7. Meanwhile, prepare the romesco sauce. In a blender or food processor, combine roasted red bell peppers, almonds, garlic, olive oil, red wine vinegar, paprika, salt, and pepper. Blend until smooth.

  8. Serve the baked sea bass fillets topped with the romesco sauce.
