Ingredients

  • 2 medium aubergines, sliced lengthwise
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 red chilli, finely chopped
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 clove garlic, minced
  • 1 tsp sesame oil
  • 1 tbsp chopped peanuts, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Place the aubergine slices on a baking sheet and drizzle with olive oil. Season with salt and pepper.

  3. Roast the aubergine in the preheated oven for 25-30 minutes, or until golden and tender.

  4. While the aubergine is roasting, prepare the chilli peanut dressing. In a small bowl, mix together the chopped chilli, peanut butter, soy sauce, honey, rice vinegar, minced garlic, and sesame oil until well combined.

  5. Once the aubergine is cooked, remove from the oven and let it cool slightly.

  6. Drizzle the chilli peanut dressing over the roasted aubergine slices.

  7. Garnish with chopped peanuts and fresh cilantro.

  8. Serve the roasted aubergine with chilli peanut dressing as an appetizer or side dish.
