  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1/4 cup clementine juice
  • 1/4 cup cranberry syrup
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tray.

  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Beat in the eggs, clementine juice, and cranberry syrup until well combined.

  4. In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Divide the batter evenly among the muffin cups.

  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

  9. Dust with powdered sugar before serving.
